One room, one hearth, one short menu. We cook whole ingredients over live embers and write the card the same morning we serve it.

The hearth

Everything passes the fire, including vegetables, shellfish, bread, and the last of the season's stone fruit.

Smoke is an ingredient, not a finish. We cook close to the coals and season with salt, acid, and the fat of whatever we're cooking.
